Tomato Rice

Tomatoes- 2 nos
Rice(cooked0- 1 cup
Finely chopped onions- 1
Mustard seeds- 1/2 tea spoon
Cumin seeds- 1/2 tea spoon
Coriander leaves
Curry leaves- few
Red chilly Powder- 1 tea spoon.
Turmeric Powder- 1/2 tea spoon.
Oil for cooking
Salt to taste

Preparation:
1.In a pan, add two table spoon oil.
2. Now add mustard seeds.Let it splutter.Add the cumin seeds.
3.Add the finely chopped onions.Let it fry for a few minutes till it turns golden brown.
4.Add the tomatoes after this.Fry till the tomatoes are done.
5.Add turmeric powder and chilly powder and saute the tomatoes.
6.Now add the cooked rice and salt accordingly.
7.Mix well.Serve hot.


Corn and Green peas Rice

Basmati Rice(cooked)- 1 cup.
Spring Onions- the stem as  well as the leaves finely chopped.
Green Peas- 1/4 cup par boiled.
Sweet corn- 1/4 cup boiled
Pepper Powder- 1 tea spoon
Jeera Powder- 1/2 tea spoon.
Green Chilli sauce- 2 tea spoon.
Oil for cooking.
Salt to taste.

Preparation:
1. In a frying pan, add 2 table spoon oil and let it heat.
2. Add the spring onions(not the leaves).
3.Let it turn slightly brown.
4. Now add the  green peas.Fry for some time.
5. Next add pepper powder, jeera powder and the spring onion leaves.
6.It will give an aromatic smell.
7.Now add the  boiled rice and mix it well.Add salt according to taste.
8.Add the green chilli sauce and mix evenly.
9.Sweet Corn and Green Peas Rice is ready.
10.Garnish with coriander leaves.
11.Serve hot with raita

Pudina Rice

Pudina (Mint leaves)-  1 Bundle.
Onion - 1 finely chopped
Ginger- a few pieces
Garlic- 4 pods
Green Chillies -  3 (you can vary it according to how hot you want it)
Cardamon- 3
Cinnamon sticks- 2
Bay leaves- 2
Cumin seeds- 1/2 tea spoon
Cloves- 3
Basmati Rice- 1 cup
Oil for cooking
Salt to taste

Preparation:
1) Soak the basmati rice in water for 15-20 minutes.
2) Wash the pudina leaves properly and grind it with ginger,garlic and green chilly.
3)  In a pan, take three tablespoon oil.
4) To that add cumin seeds.After they splutter, add cinnamon sticks,cardamon,cloves,bay leaves and saute it till it gives out an aromatic flavor.
5) Now add finely chopped onions.
6) After they turn slightly brown, add the ground mint leaves paste and fry it  nicely till it leaves the raw smell.
7) Now add the soaked basmati rice and saute it for a dew minutes.
8) Add this to a pressure cooker,add salt and let it cook.
9) Garnish with finely chopped mint leaves.
10) Serve hot with onion raita.

Paal Payasam

Milk- 1 1/2 Litre
Sugar- 1 1/2 cups
Condensed Milk- 3 spoons
Rice- 4 1/4 cup.

Preparation:
1) Boil the milk with rice in a pressure cooker with more than enough whistles.
2) Now add sugar to the milk and rice mixture and stir for a few minutes.
3) See that the payasam turns pinkish.
4) Now add the condensed milk and let it boil for a few minutes.

Paal Payasam is ready!!!!
